Lunch Ideas: Rice + Veg

 
 

“Why won’t you look at that… your girls back with more lunch Inspo for people that can’t be bothered to eat lunch… e.g me!”

Most days I eat for pure enjoyment, because I love food and my body loves it too. However, some days I have to eat just so I can get through the day without worrying that I’ll dramatically collapse from hunger :|

On my busy days, pre-made rice packs are my true saviour! Most are already cooked, so you can eat them cold as part of a salad, which is perfect for when you don’t have a microwave on hand.

I will often find myself making a type of Carb Salad on the busy days to help keep me energised but also get that bit of fibre goodness in. Adding things like celery, peppers, cucumber, tomatoes, grated carrot or cabbage, or things like finely sliced spinach, tinned sweetcorn etc are all amazing for throwing a Carb Salad together.

Picture Contents:

  • Rice pack (your preference, I used Mexican here)

  • Grated carrot and cabbage mixed with some mayo to make a type of coleslaw.

  • Sliced celery

  • Sliced red pepper

Thats literally it! Really quick and easy. Keeps you going strong and ultimately does the job. Now you can add as much or little of anything as you want to Carb Salads. To this you could add chicken or beef pieces, Tofu, tuna, chickpeas, beans… the list can go on. You can also make them as exciting or boring as you like. Everything will always come down to personal preference, but the main idea is that following a meal like this helps you explore different ways of creating a balanced meal with little effort and still helping you to achieve your daily goals.
