4 Ways To Eat Sweet Potato

Sweet potatos are nutrient-dense root vegetables that come in a variety of colours.

They’re high in fiber and antioxidants, which protect your body from free radical damage and promote a healthy gut and brain.

They’re also incredibly rich in beta-carotene, which is converted to vitamin A to support good vision and your immune system.

Sweet potatoes are versatile and can be prepared in both sweet and savory dishes, making them an exceptional carb option for most people.

Using to Cook

Since sweet potatoes are so versatile, there is very little they’re not good for. 200g (around an average size portion) provides 41.4g of carbohydrate per serving, making it a perfect base for any meal.

They are equally perfect to use for baking, as when pureed, the consistency adds moisture without adding a high level of fat.

My Favourite Ways To Cook - Sweet Potato

1 —

Roasted Slices

  • Washed + peeled, cut into slices, placed on a tray and seasoned, then baked in the oven.

  • Perfect to add on a side, mix in with salads or have on its own.

2 —

Mashed

  • Peeled + boiled till tender, mash with milk or cream (can use dairy alternative) and season.

  • I like to serve this on the side, accompanied by tray baked salmon with fried spinach + pesto drizzle (you won’t regret trying this dish!)

3 —

Boiled

  • Peel + boil in lightly salted water till tender soft.

  • I like to use boiled mash when baking. My favourite is using it as a base for rich chocolate brownies. (recipe to follow)

4 —

Fried potato cakes

  • Peel, dice and cook with an onion in a pan till tender, then leave to cool. In a bowl, add desired + cooled fillings with an egg to bind - my choice would be chopped broccoli, fried bacon pieces and grated cheese.

  • Perfect addition to any weekday meal.
