Frittata + Vegan Sausages

 
 

Whether you’re wanting a change from the classic fry-up, or looking for a new way to serve eggs, this super easy and quick make won’t disappoint!

Containing around 16g of natural protein, this will help keep you fuller for longer whilst giving you some good fuel to burn as you go about your day.

Sausages are from Aldi’s Plant Menu range

Recipe for Frittata:

  • 2 Eggs

  • Half a bell pepper

  • Green beans

  • Handful of spinach

  • Salt + pepper

  • Oat milk (or any preference milk)

  • Chilli sauce or pesto (optional)

How-To:

  • Start by pre-heating the oven to 180 and greasing your ovenproof dish of choice, to help stop things from sticking.

  • Then crack the eggs into the dish along with some milk and salt + pepper, then give the mixture a whisk.

  • Chop the pepper, green beans and spinach into small pieces so they fit in the dish, then add to the mix and stir.

  • As an optional choice, I then add chilli sauce or pesto on top of the mixture before baking for an extra kick and flavour.

  • Place in the oven and cook for 15-20 minutes until egg is cooked.

  • At this point you also want to cook any extras that may be accompanying the dish. I chose vegan sausages, but the options are endless.

Once cooked, serve and enjoy!
